I love making them because the fresh fruit on top makes it look really pretty and colorful, and yet it&#8217;s deceptively simple to make. I love the combination of the brown sugar crust, the sweet pastry cream, and the tartness from the fresh fruit when you take a bite of the tart.<\/p>\n<p>I&#8217;ve always used this crust, after I stumbled upon the recipe <a href=\"http:\/\/fruittart.wordpress.com\/2008\/09\/06\/step-by-step-tart-crust\/\">here<\/a>. The recipe on that page is for a 12-inch tart pan. Since I have a 9-inch tart pan, I scale down the ingredients to 3\/4, and it works out very well:<br \/>\n1 cup flour<br \/>\n1\/4 cup packed brown sugar<br \/>\n1\/2 cup butter<br \/>\nI just mix these together, no stand mixer needed. Then I just press it into the tart pan, bake it for 10 minutes at 400F, and it&#8217;s done.<\/p>\n<p><a href=\"http:\/\/www.flickr.com\/photos\/evillemur\/5521544631\/\" title=\"IMG_3790 by evillemur, on Flickr\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/farm6.static.flickr.com\/5211\/5521544631_6b3e7a1c4f.jpg\" width=\"500\" height=\"375\" alt=\"IMG_3790\" \/><\/a><br \/>\nOnly 3 ingredients! And it has a nice butter and brown sugar flavor. (Astute readers might notice that the bottom of a 9-inch tart pan actually has 9\/16 the area of the bottom of a 12-inch tart pan, not 3\/4 like I used for the scaling above, but I think this works out well because I like a thicker crust.)<\/p>\n<p>The pastry cream is also easy. I use this <a href=\"http:\/\/allrecipes.com\/Recipe\/Pastry-Cream-2\/Detail.aspx\">recipe<\/a> from Allrecipes.com.<\/p>\n<p><a href=\"http:\/\/www.flickr.com\/photos\/evillemur\/5522134894\/\" title=\"IMG_3791 by evillemur, on Flickr\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/farm6.static.flickr.com\/5171\/5522134894_a3f04142ff.jpg\" width=\"500\" height=\"375\" alt=\"IMG_3791\" \/><\/a><br \/>\nThe pastry cream isn&#8217;t overly sweet, and I think it&#8217;s not as unhealthy as you would think, since it&#8217;s mostly milk, not cream. The amount of butter is also minimal. OK, so it&#8217;s not like vegetables or anything, but it&#8217;s a lot better than whipped cream or something.<\/p>\n<p>After the pastry cream cools in the fridge, I just put a generous layer of it in the crust.<\/p>\n<p><a href=\"http:\/\/www.flickr.com\/photos\/evillemur\/5522135264\/\" title=\"IMG_3793 by evillemur, on Flickr\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/farm6.static.flickr.com\/5094\/5522135264_69e910dbe3.jpg\" width=\"500\" height=\"375\" alt=\"IMG_3793\" \/><\/a><br \/>\nEven after putting so much pastry cream in, I still have some left over to snack on later!<\/p>\n<p>Now what&#8217;s a fruit tart without fruit?<\/p>\n<p><a href=\"http:\/\/www.flickr.com\/photos\/evillemur\/5522135088\/\" title=\"IMG_3792 by evillemur, on Flickr\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/farm6.static.flickr.com\/5012\/5522135088_66a0912ffe.jpg\" width=\"500\" height=\"375\" alt=\"IMG_3792\" \/><\/a><br \/>\nI used four kinds of fruit this time: oranges, strawberries, mangoes, and blueberries. Now the tricky part is getting all of this fruit into that little 9-inch tart&#8230;<\/p>\n<p><a href=\"http:\/\/www.flickr.com\/photos\/evillemur\/5522135432\/\" title=\"IMG_3794 by evillemur, on Flickr\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/farm6.static.flickr.com\/5173\/5522135432_b5cda743cf.jpg\" width=\"500\" height=\"375\" alt=\"IMG_3794\" \/><\/a><br \/>\nOK, so I couldn&#8217;t fit anywhere close to all that fruit on top of the tart.
