Well, &#8220;no time&#8221; is a lie, since it&#8217;s not like I haven&#8217;t had any time at all. Just not enough energy, perhaps. There were holidays and a lot of cooking and social events, to be totally fair.<\/p>\n<p>A couple of years ago, I made a banana cream tart from the <a href=\"http:\/\/www.amazon.com\/gp\/product\/0811875040\/ref=as_li_tl?ie=UTF8&#038;camp=1789&#038;creative=390957&#038;creativeASIN=0811875040&#038;linkCode=as2&#038;tag=evillemur-20&#038;linkId=A4EUSUOZCFPMCA4I\"><em>Miette<\/em><\/a> cookbook. Except instead of following her instructions for p\u00c3\u00a2te sucr\u00c3\u00a9e and pastry cream, I just went with my usual recipes. Which made this whole thing much easier.<\/p>\n<p><a data-flickr-embed=\"true\"  href=\"https:\/\/www.flickr.com\/photos\/evillemur\/8708515724\/in\/album-72157633403374387\/\" title=\"IMG_8035\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/farm9.staticflickr.com\/8140\/8708515724_bb5fb39c31.jpg\" width=\"500\" height=\"375\" alt=\"IMG_8035\"><\/a><script async src=\"\/\/embedr.flickr.com\/assets\/client-code.js\" charset=\"utf-8\"><\/script><\/p>\n<p><strong>Banana Cream Tart<\/strong><br \/>\nfrom <a href=\"http:\/\/www.amazon.com\/gp\/product\/0811875040\/ref=as_li_tl?ie=UTF8&#038;camp=1789&#038;creative=390957&#038;creativeASIN=0811875040&#038;linkCode=as2&#038;tag=evillemur-20&#038;linkId=A4EUSUOZCFPMCA4I\"><em>Miette<\/em><\/a><\/p>\n<p><em>Pastry Cream<\/em><br \/>\n2 cups milk<br \/>\n1\/4 cup sugar<br \/>\n2 egg yolks<br \/>\n1 egg<br \/>\n1\/4 cup cornstarch<br \/>\n1\/3 cup sugar<br \/>\n2 tablespoons butter<br \/>\n1 teaspoon vanilla extract<\/p>\n<p><em>Crust<\/em><br \/>\n1 cup flour<br \/>\n1\/4 cup packed brown sugar<br \/>\n1\/2 cup butter<\/p>\n<p>1 ounce semisweet chocolate, melted<br \/>\n2 large ripe bananas<br \/>\n1 cup heavy cream<br \/>\n3 tablespoons powdered sugar<br \/>\n1\/4 cup chocolate shavings<\/p>\n<ol>\n<li>Make the pastry cream by first stirring together the milk and 1\/4 cup of sugar in a saucepan until it comes to a boil.<\/li>\n<li>Put the egg yolks, egg, cornstarch, and 1\/3 cup sugar into a bowl, and whisk them together.<\/li>\n<li>Pour the boiling milk in a thin stream over the egg mixture, while you\u00e2\u20ac\u2122re continuously stirring, so that the eggs don\u00e2\u20ac\u2122t turn into scrambled eggs.<\/li>\n<li>Then after that\u00e2\u20ac\u2122s all mixed together, return the mixture to the saucepan, and bring to a boil while constantly stirring. The bottom can burn if you\u00e2\u20ac\u2122re not stirring enough, so be careful.<\/li>\n<li>Once it comes to a boil, take it off the heat, and put in the butter and vanilla extract.<\/li>\n<li>Once those are stirred in, let cool in the fridge, with some plastic wrap over the surface so it doesn\u00e2\u20ac\u2122t form a skin.<\/li>\n<li>Make the crust by mixing together the flour, brown sugar, and flour, and then press into a 9-inch tart pan.<\/li>\n<li>Bake the crust at 400F for 9-10 minutes, until golden brown.<\/li>\n<li>Let the crust cool completely.<\/li>\n<li>Spread the melted chocolate on the bottom of the cooled tart shell.<\/li>\n<li>Refrigerate for about 10 minutes or until set.<\/li>\n<li>Cut the bananas into 1\/4-inch slices.<\/li>\n<li>Arrange the banana slices in a single layer over the layer of melted chocolate.<\/li>\n<li>Spread the cooled pastry cream over the bananas, smoothing the surface with a spatula.<\/li>\n<li>Whip the heavy cream using a hand mixer or stand mixer until soft peaks form.<\/li>\n<li>Add the powdered sugar and continue whipping the cream until it has stiff peaks.<\/li>\n<li>Spread the whipped cream over the pastry cream.<\/li>\n<li>Sprinkle the chocolate shavings over the surface of the whipped cream.<\/li>\n<\/ol>\n<p><a data-flickr-embed=\"true\"  href=\"https:\/\/www.flickr.com\/photos\/evillemur\/8708514370\/in\/album-72157633403374387\/\" title=\"IMG_8029\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/farm9.staticflickr.com\/8119\/8708514370_a03820959b.jpg\" width=\"500\" height=\"375\" alt=\"IMG_8029\"><\/a><script async src=\"\/\/embedr.flickr.com\/assets\/client-code.js\" charset=\"utf-8\"><\/script><\/p>\n<p>The usual crust, pressed into the tart pan.<\/p>\n<p><a data-flickr-embed=\"true\"  href=\"https:\/\/www.flickr.com\/photos\/evillemur\/8707393003\/in\/album-72157633403374387\/\" title=\"IMG_8030\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/farm9.staticflickr.com\/8128\/8707393003_f0554d1342.jpg\" width=\"500\" height=\"375\" alt=\"IMG_8030\"><\/a><script async src=\"\/\/embedr.flickr.com\/assets\/client-code.js\" charset=\"utf-8\"><\/script><\/p>\n<p>The crust, after baking.<\/p>\n<p><a data-flickr-embed=\"true\"  href=\"https:\/\/www.flickr.com\/photos\/evillemur\/8707393197\/in\/album-72157633403374387\/\" title=\"IMG_8031\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/farm9.staticflickr.com\/8560\/8707393197_5fbacf8155.jpg\" width=\"500\" height=\"375\" alt=\"IMG_8031\"><\/a><script async src=\"\/\/embedr.flickr.com\/assets\/client-code.js\" charset=\"utf-8\"><\/script><\/p>\n<p>The melted chocolate spread over the bottom of the crust.<\/p>\n<p><a data-flickr-embed=\"true\"  href=\"https:\/\/www.flickr.com\/photos\/evillemur\/8707393421\/in\/album-72157633403374387\/\" title=\"IMG_8032\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/farm9.staticflickr.com\/8397\/8707393421_ca5547973b.jpg\" width=\"500\" height=\"375\" alt=\"IMG_8032\"><\/a><script async src=\"\/\/embedr.flickr.com\/assets\/client-code.js\" charset=\"utf-8\"><\/script><\/p>\n<p>The sliced bananas, arranged on the chocolate.<\/p>\n<p><a data-flickr-embed=\"true\"  href=\"https:\/\/www.flickr.com\/photos\/evillemur\/8707393661\/in\/album-72157633403374387\/\" title=\"IMG_8033\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/farm9.staticflickr.com\/8540\/8707393661_716fc187f9.jpg\" width=\"500\" height=\"375\" alt=\"IMG_8033\"><\/a><script async src=\"\/\/embedr.flickr.com\/assets\/client-code.js\" charset=\"utf-8\"><\/script><\/p>\n<p>And then the pastry cream goes on top of that.<\/p>\n<p><a data-flickr-embed=\"true\"  href=\"https:\/\/www.flickr.com\/photos\/evillemur\/8707393847\/in\/album-72157633403374387\/\" title=\"IMG_8034\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/farm9.staticflickr.com\/8537\/8707393847_55e3784193.jpg\" width=\"500\" height=\"375\" alt=\"IMG_8034\"><\/a><script async src=\"\/\/embedr.flickr.com\/assets\/client-code.js\" charset=\"utf-8\"><\/script><\/p>\n<p>And then a layer of whipped cream.
