I love strawberries, and I love crunchy streusel topping, so these muffins sounded wonderful.<\/p>\n<p>It&#8217;s the holidays and stuff, so again I just haven&#8217;t found the energy to write a story about it. Maybe in 2016&#8230;<\/p>\n<p><a data-flickr-embed=\"true\"  href=\"https:\/\/www.flickr.com\/photos\/evillemur\/8731112894\/in\/album-72157633459847703\/\" title=\"IMG_8086\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/farm8.staticflickr.com\/7281\/8731112894_1b5a9894d2.jpg\" width=\"500\" height=\"375\" alt=\"IMG_8086\"><\/a><script async src=\"\/\/embedr.flickr.com\/assets\/client-code.js\" charset=\"utf-8\"><\/script><\/p>\n<p><strong>Strawberry Coffee Cake Muffins<\/strong><\/p>\n<p><em>Vanilla Streusel<\/em><br \/>\n1\/4 cup (1\/2 stick) butter, at room temperature<br \/>\n1\/2 cup brown sugar<br \/>\n1\/3 cup all-purpose flour<br \/>\n1\/8 teaspoon salt<br \/>\n1 teaspoon vanilla extract<\/p>\n<p><em>Strawberry Muffins<\/em><br \/>\n1 1\/2 cups all-purpose flour<br \/>\n1\/2 teaspoon baking powder<br \/>\n1\/2 teaspoon baking soda<br \/>\n1\/4 teaspoon salt<br \/>\n1\/4 cup (1\/2 stick) butter, at room temperature<br \/>\n1 cup sugar<br \/>\n2 large egg whites, at room temperature<br \/>\n1 teaspoon vanilla extract<br \/>\n1\/4 teaspoon almond extract<br \/>\n1 cup strawberry puree, which is about 12 ounces of strawberries<\/p>\n<ol>\n<li>Preheat oven to 350F.<\/li>\n<li>Line 12 muffin cups in a muffin tin.<\/li>\n<li>Make the streusel by creaming together the butter and brown sugar.<\/li>\n<li>Add the flour, salt, and vanilla to the butter mixture and beat until well-combined.<\/li>\n<li>Make some clumps of streusel by squeezing handfuls of the mixture in your hand.<\/li>\n<li>Make the muffin batter by first whisking together the flour, baking powder, baking soda, and salt.<\/li>\n<li>Cream together the butter and sugar.<\/li>\n<li>Beat in the egg whites one at a time.<\/li>\n<li>Beat in the vanilla and almond extract.<\/li>\n<li>Add one third of the flour mixture to the butter mixture and stir to combine.<\/li>\n<li>Add half of the strawberry puree to the mixture and stir to combine.<\/li>\n<li>Repeat with another third of the flour mixture and the remaining strawberry puree.<\/li>\n<li>Add the remaining flour mixture and mix until just combined.<\/li>\n<li>Pour the batter evenly into the muffin cups.<\/li>\n<li>Evenly sprinkle the streusel mixture over the muffins.<\/li>\n<li>Bake the muffins for 19 to 22 minutes, or until a toothpick inserted into the center comes out clean.<\/li>\n<li>Let the muffins cool in the pan for 10 minutes before turning out onto a wire rack to cool.<\/li>\n<\/ol>\n<p><a data-flickr-embed=\"true\"  href=\"https:\/\/www.flickr.com\/photos\/evillemur\/8731112046\/in\/album-72157633459847703\/\" title=\"IMG_8081\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/farm8.staticflickr.com\/7428\/8731112046_35b87b2df1.jpg\" width=\"500\" height=\"375\" alt=\"IMG_8081\"><\/a><script async src=\"\/\/embedr.flickr.com\/assets\/client-code.js\" charset=\"utf-8\"><\/script><\/p>\n<p>The batter.
